Jalapeño Turkey Burgers

Ingredients
  

For the turkey patties
  • 1 pound ground turkey thigh meat (7% fat, 454g) Use ground turkey thigh meat for more flavor and moisture.
  • 2 pieces jalapeños (finely chopped) Remove seeds for a milder taste.
  • ½ cup grated sharp cheddar cheese (extra mature)
  • 1 teaspoon jalapeno hot sauce Optional for extra spice.
  • ½ teaspoon garlic powder
  • ¾ teaspoon kosher salt
  • to taste Freshly ground black pepper
For assembly
  • 4 slices streaky bacon Cook until crispy.
  • 4 pieces brioche burger buns
  • 4 slices cheddar cheese For topping.
  • 4 tablespoons chipotle mayo Can substitute with regular mayo or salsa.
  • 1 piece jalapeño (sliced)
  • 1 large avocado (smashed)
  • 1 cup pink pickled onions

Method
 

Preparation
  1. In a large bowl, combine the ground turkey, chopped jalapeños, grated cheddar cheese, garlic powder, salt, pepper, and jalapeño hot sauce if desired. Mix well.
  2. Divide the turkey mixture into four equal portions and shape each portion into a patty.
Cooking
  1. Heat a skillet over medium heat and cook the bacon until crispy. Remove and let drain on a paper towel.
  2. In the same skillet, cook the turkey patties for about 5-6 minutes on each side or until cooked through and golden brown.
  3. During the last minute of cooking, place a slice of cheddar cheese on each patty and cover the skillet to melt the cheese.
Assembly
  1. Spread chipotle mayo on the bottom bun, add the turkey patty with melted cheese, top with bacon, sliced jalapeños, smashed avocado, and pink pickled onions. Finish with the top bun.

Notes

Leftover burgers can be stored in an airtight container in the refrigerator for up to 3 days and reheated in a skillet. Cooked patties can be frozen for up to 2 months. Let patties rest after cooking to retain juices.
