  • 1 cup shredded cabbage
  • 1 cup shredded carrots
  • 1 cup diced bell peppers
  • 1/2 cup chopped green onions
  • 1 cup cooked protein (shrimp, chicken, or tofu) Choose your preferred protein

Method
 

Preparation
  1. In a large bowl, combine the cabbage, carrots, bell peppers, green onions, and cooked protein.
  2. Season with soy sauce, salt, and pepper, and mix well.
  3. Take an egg roll wrapper and place a spoonful of the vegetable mixture in the center.
  4. Fold the wrapper over the filling, then roll it tightly, sealing the edges with water.
Cooking
  1. Place the egg rolls in the air fryer basket and spray lightly with cooking spray.
  2. Cook at 375°F (190°C) for 10-12 minutes or until they are golden and crispy.

Notes

To serve, pair with dipping sauces like sweet chili sauce, soy sauce, or homemade peanut sauce. For storage, allow to cool completely, then store in an airtight container in the refrigerator for up to 3 days. Freeze before cooking if needed.
