Main Ingredients
  • 1 lb boneless, skinless chicken breasts or 2 chicken breasts
  • to taste all-purpose seasoning or salt, black pepper, garlic powder, onion powder, paprika
  • 2 tbsp olive or grapeseed oil
  • 2 tbsp unsalted butter divided
  • 1 each yellow bell pepper sliced or diced
  • 1 each red bell pepper sliced or diced
  • 1 each yellow onion sliced or diced
  • 8 slices provolone cheese
  • 4 each hoagie rolls
  • 1 recipe garlic aioli or mayonnaise

Method
 

Preparation
  1. Lightly pound the chicken breasts to tenderize. This step is optional but helps the chicken cook evenly and remain tender.
  2. Season each side of the chicken with your favorite all-purpose seasoning.
Cooking
  1. Heat oil over medium-high heat in a large skillet. Cook the chicken for 7-9 minutes on each side, or until the internal temperature reaches 160 degrees.
  2. Add a tablespoon of unsalted butter to the skillet after removing the chicken. Let it rest on a plate.
  3. Reduce the heat to medium. Add the remaining unsalted butter to the pan. Once melted, add the sliced bell peppers and onion. Sauté the vegetables until they are tender and have deepened in color, about 5-7 minutes.
  4. Turn the heat down to low. While the vegetables cook, slice and dice the cooked chicken. Return the chicken to the skillet and stir everything together.
  5. Cover the mixture in the skillet with cheese slices. Place a lid on the skillet for 3-5 minutes, or until the cheese is melted to your liking.
Assembly
  1. If desired, toast the hoagie rolls. Spread garlic aioli on each side, then divide the chicken, vegetable, and cheese mixture evenly among the rolls.

Notes

Serve hot and fresh with sides like crispy fries, a simple salad, or potato chips. For a kick of heat, add extra toppings like jalapeños or hot sauce. Store leftovers in an airtight container for up to 3 days, keeping hoagie rolls separate.
