  • 1/2 cup milk Add alternately with flour mixture.

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour a cake pan.
  2. In a large bowl, cream together the softened butter and sugar until light and fluffy.
  3. Add the eggs one at a time, mixing well after each addition.
  4. In a separate bowl, combine the flour, baking powder, and salt.
  5. Gradually add the dry ingredients to the butter mixture alternately with the milk, starting and ending with the flour mixture.
  6. Stir in the lemon zest and vanilla extract.
  7. Pour the batter into the prepared cake pan and smooth the top.
  8. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
  9. Let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Serve plain or with powdered sugar, ice cream, or fresh fruits like berries. Store in an airtight container; it can be refrigerated or frozen for up to three months. Make sure to wrap it well before freezing.
