Base Ingredients
  • 1 cup pistachios Shelled
  • 1 cup oats Use certified gluten-free oats for a gluten-free version
  • 1 cup pitted dates Make sure they're soft for easier blending
  • 1/2 cup nut butter Any nut butter can be used, such as almond or cashew
  • 1/4 cup maple syrup Adjust to taste for sweetness
  • 1 teaspoon vanilla extract For flavor enhancement

Method
 

Preparation
  1. In a food processor, combine the pistachios and oats until finely ground.
  2. Add in the pitted dates, nut butter, maple syrup, and vanilla extract. Process these ingredients until a sticky dough forms.
  3. Line an 8x8-inch pan with parchment paper for easy removal.
  4. Press the mixture evenly into the lined pan.
  5. Refrigerate the pan for at least 2 hours to allow the bars to set.
  6. Cut the cooled mixture into bars and enjoy!

Notes

For enhanced flavor, consider adding chocolate chips or dried fruits. Adjust sweetness as desired.
