  • 1 cup cooked chickpeas Can use canned chickpeas, rinsed and drained.
  • 1/2 cup fresh parsley, chopped Wash the herbs just before use.
  • 1/4 cup fresh mint, chopped
  • 1 small tomato, diced
  • 1/4 cup cooked bulgur wheat Quinoa can be substituted for a gluten-free option.
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice Adjust according to taste.
  • 1 clove garlic, minced Adjust according to taste.
  • to taste salt
  • to taste pepper
  • for drizzling olive oil

Method
 

Preparation
  1. Gather all ingredients.
  2. In a food processor, combine the cooked chickpeas, parsley, mint, tomato, bulgur wheat, tahini, lemon juice, and garlic.
  3. Blend the mixture until it’s smooth.
  4. Taste and season with salt and pepper as desired.
  5. Serve the hummus drizzled with olive oil.

Notes

For an extra creamy texture, blend longer until smooth. Serve with various dippers for an appetizing platter. Store leftovers in an airtight container in the fridge and consume within three days.
