  • 1 cup pitted dates Make sure they are soft; soak in warm water if dry.
  • 1 cup raw cashews You can substitute with almonds, walnuts, or pistachios.
  • 1/2 cup freeze-dried strawberries Use fresh freeze-dried strawberries for best flavor.
  • 1 scoop protein powder Feel free to experiment with different flavors.
  • 1 teaspoon vanilla extract
  • 1/4 cup coconut flour
  • a pinch salt

Method
 

Preparation
  1. In a food processor, combine the pitted dates, raw cashews, freeze-dried strawberries, protein powder, vanilla extract, coconut flour, and a pinch of salt.
  2. Blend until the mixture is well combined and sticky.
  3. If the mixture is too dry, you can add a little water or nut milk to help it come together.
  4. Scoop out small portions and roll them into balls.
  5. Place the protein balls on a parchment-lined tray and refrigerate for at least 30 minutes to firm up.

Notes

These protein balls can be served on their own or with yogurt or melted chocolate. Store in an airtight container in the fridge for up to one week, or freeze for up to three months. Experiment with different nuts, seeds, or freeze-dried fruits for customization.
