- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the garlic until fragrant.
- Add the fresh spinach and cook until wilted.
- In a bowl, mix the sautéed spinach with cream cheese and mozzarella cheese until well combined.
- Cut a pocket in each chicken breast with a sharp knife, being careful not to cut all the way through.
- Stuff each chicken breast with the spinach mixture, pushing it in gently.
- Season the chicken breasts with salt and pepper to taste.
- Heat some olive oil in a pan and sear the chicken on both sides until golden brown.
- Transfer the chicken to a baking dish and bake for 25-30 minutes or until cooked through and no longer pink in the center.
- Let the chicken rest for a few minutes before serving.
