Ingredients
  

For the cookie cups
  • 1 cup graham cracker crumbs
  • 1/2 cup melted butter For binding the crumbs
For the filling
  • 1 cup chocolate chips Use dark, milk, or a mix of both
  • 1 cup mini marshmallows Substitute with halved regular marshmallows if necessary

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter until well mixed.
  3. Press the crumb mixture into the bottom of a muffin tin to form cups.
Baking
  1. Bake for 5-7 minutes until lightly golden.
  2. Remove from the oven and immediately fill each cup with chocolate chips and mini marshmallows.
  3. Return to the oven for another 3-5 minutes until the marshmallows are toasted.
  4. Let them cool before serving.

Notes

Serve warm with vanilla ice cream or a drizzle of chocolate sauce. A sprinkle of sea salt can enhance the flavor. Store any leftovers in an airtight container for up to three days, or refrigerate for about a week. Reheat in the microwave to restore gooeyness.
