For the Zucchini
  • 2 medium zucchini Choose firm zucchini for the best texture and flavor.
  • 4 oz feta cheese Crumble on top for flavor.
  • 1/4 cup fresh mint Garnish with fresh mint.
For the Lemon Dressing
  • 2 tbsp lemon juice Freshly squeezed for the best flavor.
  • 2 tbsp olive oil Adjust to taste.
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Method
 

Preparation
  1. Preheat a grill or grill pan over medium heat.
  2. Slice the zucchini into thick rounds or strips.
Grilling
  1. Grill the zucchini for about 3-4 minutes on each side, until slightly smoky and tender.
Making the Dressing
  1. In a small bowl, whisk together lemon juice, olive oil, salt, and pepper.
Serving
  1. Remove the zucchini from the grill and place it in a serving bowl.
  2. Drizzle the lemon dressing over the warm zucchini.
  3. Crumble feta cheese on top and garnish with fresh mint.
  4. Serve warm or at room temperature.

Notes
