Ingredients
  

For the Chicken Marinade
  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup chipotle ranch dressing
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
For the Burritos
  • 4 large tortillas
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup cooked rice
  • 1 cup black beans, rinsed and drained
  • 1 cup corn
  • 1 piece avocado, sliced
  • Fresh cilantro for garnish

Method
 

Marinating the Chicken
  1. In a large bowl, mix the chicken breasts with chipotle ranch dressing, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Make sure the chicken is well coated. Marinate for at least 30 minutes.
Grilling the Chicken
  1. Preheat your grill to medium-high heat.
  2. Grill the marinated chicken for about 6-7 minutes on each side or until fully cooked. The internal temperature should reach 165°F (75°C).
  3. Let the chicken rest for a few minutes, then slice it into strips.
Assembling the Burritos
  1. To assemble the burritos, lay a tortilla on a clean surface.
  2. Add a scoop of cooked rice, some black beans, corn, sliced avocado, shredded cheese, and the grilled chicken on top.
  3. Fold the sides of the tortilla inward, then roll it up tightly from the bottom to enclose the filling.
  4. Place the burrito on the grill for an additional 1-2 minutes on each side or until the tortilla is golden brown and crisp.
  5. Cut the burrito in half and garnish with fresh cilantro before serving.

Notes

Marinate the chicken for at least 30 minutes for best flavor. Add other veggies like bell peppers or spinach for extra freshness. Customize with vegetarian options by swapping chicken for grilled portobello mushrooms or zucchini.
