Marination and Grilling
- In a bowl, combine chicken breasts, chipotle ranch dressing, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper. Marinate for at least 30 minutes.
- Preheat the grill to medium-high heat and grill the marinated chicken for 6-7 minutes on each side or until cooked through. Let it rest before slicing.
Burrito Assembly
- To assemble the burritos, place a tortilla on a flat surface. Add a portion of cooked rice, black beans, corn, sliced avocado, shredded cheese, and sliced grilled chicken.
- Fold the sides of the tortilla inward, then roll it up tightly from the bottom.
- Heat the burrito on the grill for an additional 1-2 minutes per side or until the tortilla is golden and crisp.
- Cut in half and garnish with fresh cilantro before serving.
Notes
Marinate the chicken longer for an even deeper flavor. Use different types of beans or add more veggies to customize your burritos. Make it a vegetarian option by replacing chicken with grilled vegetables or tofu. Adjust the spice level by using more or less chipotle ranch dressing.
