Ingredients
  

For the Chicken
  • 4 pieces Drumsticks You can substitute with thighs or breasts if preferred.
  • 2 tablespoons Chipotle powder Adjust based on spice preference.
  • 1 tablespoon Smoked paprika
  • 2 tablespoons Brown sugar
  • 1 cup Hickory wood for smoking Soak in water for at least 30 minutes before use.
For the Chipotle Ranch Dipping Sauce
  • 1/2 cup Mayonnaise
  • 1/2 cup Sour cream
  • 1/4 cup Buttermilk
  • 1/4 cup Fresh herbs (like parsley, cilantro) Chopped.
  • 1 tablespoon Diced chipotle pepper Adjust to taste.

Method
 

Preparation
  1. Preheat your grill and prepare for smoking with hickory wood.
  2. Butterfly the drumsticks and season them with a dry rub made from chipotle powder, smoked paprika, and brown sugar.
Cooking
  1. Place the chicken on the grill and smoke until fully cooked.
Making the Sauce
  1. In a bowl, mix together mayonnaise, sour cream, buttermilk, fresh herbs, and diced chipotle pepper to create the Chipotle Ranch Dipping Sauce.
Serving
  1. Serve the grilled chicken hot off the grill with the dipping sauce on the side.

Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
