Preparation
- Spray your slow cooker with nonstick cooking spray and place the boneless, skinless chicken breasts inside.
- In a bowl, mix minced garlic, lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Pour this mixture over the chicken.
Cooking
- Cover and cook the chicken on HIGH for 3-4 hours or on LOW for 6-8 hours.
- While the chicken cooks, prepare the Tzatziki sauce by mixing Greek yogurt, minced garlic, grated cucumber, chopped parsley, and salt in a bowl. Refrigerate for at least an hour.
Serving
- Once the chicken is done, shred it using two forks right in the slow cooker.
- Serve it with warm pocketless pita bread, fresh tomatoes, onions, cucumbers, lettuce, and the homemade Tzatziki sauce.
Notes
For added flavor, marinate the chicken overnight before cooking. Customize the toppings with your favorite veggies or a sprinkle of feta cheese for an extra tangy taste.
