Ingredients
  

For the Chicken
  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon nonstick cooking spray To spray the slow cooker
  • 2 cloves minced garlic
  • 1/4 cup lemon juice
  • 1 medium diced onion
  • 1/4 cup water
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon oregano
  • 1/2 teaspoon allspice
  • 1/2 teaspoon lemon pepper
For the Tzatziki Sauce
  • 1 cup Greek yogurt
  • 1 clove minced garlic
  • 1/2 cup grated cucumber Squeeze out excess moisture for thicker sauce
  • 2 tablespoons chopped parsley
  • 1/2 teaspoon salt
Serving Ingredients
  • 4 pieces pocketless pita bread Warm before serving
  • 1 cup sliced tomatoes
  • 1 cup sliced onions
  • 1 cup sliced cucumbers
  • 1 cup shredded lettuce

Method
 

Preparation
  1. Spray your slow cooker with nonstick cooking spray and place the boneless, skinless chicken breasts inside.
  2. In a bowl, mix minced garlic, lemon juice, diced onion, water, olive oil, red wine vinegar, oregano, allspice, and lemon pepper. Pour this mixture over the chicken.
Cooking
  1. Cover and cook the chicken on HIGH for 3-4 hours or on LOW for 6-8 hours.
  2. While the chicken cooks, prepare the Tzatziki sauce by mixing Greek yogurt, minced garlic, grated cucumber, chopped parsley, and salt in a bowl. Refrigerate for at least an hour.
Serving
  1. Once the chicken is done, shred it using two forks right in the slow cooker.
  2. Serve it with warm pocketless pita bread, fresh tomatoes, onions, cucumbers, lettuce, and the homemade Tzatziki sauce.

Notes

For added flavor, marinate the chicken overnight before cooking. Customize the toppings with your favorite veggies or a sprinkle of feta cheese for an extra tangy taste.
