Preparation
  1. Begin by washing and chopping the potatoes into bite-sized pieces.
  2. Heat oil in a skillet over medium heat and add the potatoes. Cook until they are crispy and golden brown, about 10-15 minutes.
  3. In another pan, cook the sausage until browned and cooked through.
  4. In a bowl, whisk the eggs with salt and pepper. Scramble them in the same pan used for the sausage until fluffy.
  5. In serving bowls, layer the crispy potatoes, cooked sausage, and scrambled eggs.
  6. Top with your choice of fresh veggies. Serve warm and enjoy!

Notes
