  • 3-4 lbs beef roast Choose a cut suitable for roasting.
  • to taste Salt
  • to taste Black pepper
  • 1 tsp Garlic powder
  • 1 tsp Onion powder
  • 2 tbsp Olive oil For searing the roast.
  • to taste Fresh herbs (rosemary, thyme) Can substitute with dried herbs.

Method
 

Preparation
  1. Preheat your oven to 225°F (107°C).
  2. Season the beef roast generously with salt, black pepper, garlic powder, and onion powder.
  3. In a skillet, heat olive oil over medium-high heat and sear the roast on all sides until it is nicely browned.
Roasting
  1. Transfer the roast to a baking dish and place it in the preheated oven.
  2. Roast for about 2-3 hours or until the internal temperature reaches your desired doneness.
  3. Increase the oven temperature to 500°F (260°C) and roast for an additional 10-15 minutes to create a crispy crust.
  4. Let the roast rest for 15 minutes before slicing.
Serving
  1. Slice the roast against the grain for tender pieces and serve with classic sides like mashed potatoes, roasted vegetables, or a fresh salad.
  2. Drizzle some of the pan juices over the slices for extra flavor.

Notes

Pat the roast dry before seasoning for a better crust. Use a meat thermometer for doneness and let the roast rest to redistribute juices.
