  • 1 cup ricotta cheese
  • 1/2 cup pistachios, finely chopped
  • 1/4 cup honey Extra honey for drizzling is optional
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Fresh mint leaves for garnish (optional)

Method
 

Preparation
  1. In a mixing bowl, combine the ricotta cheese, honey, vanilla extract, and salt. Mix until everything is well blended.
  2. Use a spoon or small cookie scoop to portion out small bites of the mixture.
  3. Roll each bite in the finely chopped pistachios until coated.
  4. Arrange the bites on a serving plate and drizzle with extra honey if you like.
  5. Garnish with fresh mint leaves before serving. Enjoy!

Notes

Best served fresh. Store leftovers in an airtight container in the refrigerator for about three days. Add more honey if they lose some sweetness.
