- In a mixing bowl, combine the ricotta cheese, honey, vanilla extract, and salt. Mix until everything is well blended.
- Use a spoon or small cookie scoop to portion out small bites of the mixture.
- Roll each bite in the finely chopped pistachios until coated.

Notes
Best served fresh. Store leftovers in an airtight container in the refrigerator for about three days. Add more honey if they lose some sweetness.
