  • 1 pound breakfast sausage Any preferred brand
  • 6 large eggs
  • 2 cups milk Whole or your choice of milk
  • 4 cups cubed bread Any type of bread, e.g., whole grain or sourdough
  • 2 cups shredded cheese Cheddar or your choice of cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon Dijon mustard
  • to taste Chopped green onions Optional for garnish

Method
 

Preparation
  1. In a skillet, cook the sausage over medium heat until browned. Drain excess fat.
  2. In a large bowl, whisk together eggs, milk, salt, pepper, and Dijon mustard.
  3. Lightly grease a 9x13 inch baking dish. Layer the sausage, cubed bread, and shredded cheese in the dish.
  4. Pour the egg mixture over the layers, ensuring everything is covered.
  5. Cover and refrigerate overnight.
Baking
  1. Preheat your oven to 350°F (175°C).
  2. Bake the casserole uncovered for about 45 minutes, or until the eggs are set and the top is golden.
  3. Let it cool for a few minutes before serving, garnishing with chopped green onions if desired.

Notes

You can use any type of bread and customize with vegetables or different proteins. Adjust cheese amounts to your preference. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
