  • 4 pieces chicken thighs You can use bone-in or boneless thighs.
  • 1/4 cup olive oil
  • 2 tablespoons soy sauce Low-sodium soy sauce can be used.
  • 2 tablespoons lemon juice Freshly squeezed for best flavor.
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • to taste Salt and pepper

Method
 

Preparation
  1. In a bowl, mix together olive oil, soy sauce, lemon juice, minced garlic, paprika, dried oregano, salt, and pepper.
  2. Place the chicken thighs in a resealable bag or shallow dish and pour the marinade over them.
  3. Seal the bag or cover the dish and marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.
Cooking
  1. Preheat the grill or skillet over medium-high heat.
  2. Cook the chicken thighs for 6-7 minutes on each side or until they reach an internal temperature of 165°F.
  3. Allow to rest for a few minutes before serving.

Notes

Serve the chicken thighs with rice, quinoa, or a fresh salad. For a sweet option, add honey or brown sugar to the marinade. Adjust marinating time for deeper flavor.
