Ingredients

  • 2 pounds chicken breasts or thighs, cut into bite-sized pieces
  • 1 cup fresh or canned pineapple chunks drained if canned
  • 1 medium bell pepper, sliced red or green
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1/4 cup soy sauce low-sodium if preferred
  • 2 tablespoons honey or brown sugar
  • 1 tablespoon cornstarch
  • 2 tablespoons vegetable oil or olive oil

  • 1/2 teaspoon crushed red pepper flakes optional

Method
 

Marination
  1. In a large bowl, mix together the soy sauce, honey, and minced garlic. Add the chicken pieces, coating them well. Let them marinate for at least 15 minutes.
Prepare Sauce
  1. In a small bowl, whisk together the cornstarch with a tablespoon of water until smooth.
Cook Vegetables
  1. Heat vegetable oil in a large skillet over medium-high heat. Add the chopped onion and bell pepper, stirring for about 3-4 minutes until they start to soften.
Cook Chicken
  1. Add the marinated chicken to the skillet, cooking until the chicken is browned and cooked through, about 8-10 minutes.
Combine Ingredients
  1. Stir in the pineapple chunks and the sauce mixture. Cook for another 3-4 minutes, until everything is heated through.
  2. Keep stirring until the sauce has thickened to your liking. Taste, then season with salt, pepper, and red pepper flakes (if using).
Serve
  1. Serve immediately, garnished with green onions and sesame seeds if desired.

Notes

For a healthier option, consider using skinless chicken breasts and low-sodium soy sauce. You can also make this dish with tofu for a vegetarian alternative. Experimenting with different vegetables like zucchini or snap peas can also introduce new flavors.
