  • 2 tablespoons pesto sauce Use fresh pesto for best flavor.
  • 2 ounces goat cheese Can substitute with feta, cream cheese, or cheddar.
  • 2 slices crusty bread Sourdough or whole-grain bread can be used.
  • Salt and pepper to taste Adjust according to preference.
  • Olive oil (optional) For added flavor when cooking.

Method
 

Preparation
  1. Heat a non-stick skillet over medium heat.
  2. If desired, add a drizzle of olive oil for extra flavor.
  3. Add the pesto sauce to the skillet and let it warm up for about 1 minute.
  4. Crack the eggs into the skillet and fry them in the pesto until the whites are set and the yolks are cooked to your liking.
  5. Toast the slices of bread until golden brown.
  6. Spread the goat cheese on the toasted bread, then top with the fried pesto eggs.
  7. Season with salt and pepper to taste, and serve immediately.

Notes

This dish looks great served on a warm plate. Pair with fresh salad or fruit. Best enjoyed fresh, but can be stored in an airtight container in the fridge.
