- Heat a non-stick skillet over medium heat.
- If desired, add a drizzle of olive oil for extra flavor.
- Add the pesto sauce to the skillet and let it warm up for about 1 minute.
- Crack the eggs into the skillet and fry them in the pesto until the whites are set and the yolks are cooked to your liking.
- Toast the slices of bread until golden brown.
- Spread the goat cheese on the toasted bread, then top with the fried pesto eggs.
- Season with salt and pepper to taste, and serve immediately.
Notes
This dish looks great served on a warm plate. Pair with fresh salad or fruit. Best enjoyed fresh, but can be stored in an airtight container in the fridge.
