Preparation
- Preheat your oven to 425°F (220°C).
- Scrub the potatoes under cold water and dry them thoroughly.
- Prick the potatoes several times with a fork.
- Rub each potato with olive oil and sprinkle with salt and pepper.
Cooking
- Place the potatoes directly on the oven rack and bake for about 45-60 minutes until they are tender and the skin is crisp.
- Remove from the oven and let cool slightly.
- Cut a slit in the top of each potato and fluff the insides with a fork.
Serving
- Add butter, sour cream, and chives if desired before serving.
Notes
If you have leftover baked potatoes, let them cool completely. Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven. Experiment with different toppings for extra flavor.
