A classic dish that’s easy to make, baked potatoes are crispy on the outside and fluffy on the inside, perfect as a side or a snack.

Ingredients
  

Main ingredients
  • 4 large large russet potatoes Choose russet potatoes for the best texture and flavor.
  • 2 tablespoons olive oil Use enough to coat the potatoes evenly.
  • 1 teaspoon salt For seasoning.
  • 1 teaspoon freshly ground black pepper For seasoning.
Optional toppings
  • 2 tablespoons butter Optional, for extra flavor.
  • 1/2 cup sour cream Optional, can substitute with Greek yogurt.
  • 1/4 cup chives Optional, can be finely chopped.

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Scrub the potatoes under cold water and dry them thoroughly.
  3. Prick the potatoes several times with a fork.
  4. Rub each potato with olive oil and sprinkle with salt and pepper.
Cooking
  1. Place the potatoes directly on the oven rack and bake for about 45-60 minutes until they are tender and the skin is crisp.
  2. Remove from the oven and let cool slightly.
  3. Cut a slit in the top of each potato and fluff the insides with a fork.
Serving
  1. Add butter, sour cream, and chives if desired before serving.

Notes

If you have leftover baked potatoes, let them cool completely. Store in an airtight container in the refrigerator for up to 4 days. Reheat in the microwave or oven. Experiment with different toppings for extra flavor.
