  • 4 cups mixed greens (like romaine, spinach, and arugula) Feel free to mix different greens.
  • 1 piece avocado, diced
  • 4 strips bacon, cooked and crumbled You can use turkey bacon or omit for a vegetarian option.
  • 2 medium tomatoes, diced
  • 1/2 piece cucumber, sliced
  • 2 pieces hard-boiled eggs, quartered
  • 1/4 cup crumbled feta cheese (optional) Omit if you want to keep it dairy-free.
Dressing Ingredients
  • 3 tablespoons olive oil
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 2 tablespoons apple cider vinegar
  • Salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine the mixed greens, diced avocado, diced tomatoes, sliced cucumber, crumbled bacon, and quartered hard-boiled eggs.
  2. Top the salad with the sliced grilled chicken and crumbled feta cheese, if using.
  3. In a small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper to create the dressing.
  4. Drizzle the Honey Dijon dressing over the salad just before serving.
