  • 2 breasts grilled chicken breasts, sliced Use freshly grilled for best flavor.
  • 4 cups mixed greens (like romaine, spinach, and arugula)
  • 1 avocado, diced
  • 4 strips bacon, cooked and crumbled Can use pre-cooked bacon for convenience.
  • 2 medium tomatoes, diced
  • 1/2 cucumber, sliced
  • 2 hard-boiled eggs, quartered
  • 1/4 cup crumbled feta cheese (optional) Omit if dairy-free.
  • to taste Salt and pepper
For the Honey Dijon Dressing
  • 3 tablespoons olive oil
  • 1 tablespoon honey Adjust for sweetness.
  • 1 tablespoon Dijon mustard Adjust for sharpness.
  • 2 tablespoons apple cider vinegar
  • to taste Salt and pepper

Method
 

Preparation
  1. In a large bowl, combine the mixed greens, diced avocado, tomatoes, cucumber, bacon, and hard-boiled eggs.
  2. Top the salad with sliced grilled chicken and crumbled feta cheese if using.
Make the Dressing
  1. In a separate small bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, salt, and pepper to make the dressing.
Serve
  1. Drizzle the Honey Dijon dressing over the salad before serving.
  2. Toss gently to combine and enjoy!

Notes

If storing leftovers, keep dressing separate to maintain freshness. Use large lettuce leaves to convert salad into a wrap. Can add nuts for extra crunch.
