Preparation
- Pull the steaks out of the fridge about 30 minutes to 1 hour before cooking to bring them to room temperature.
- Preheat your oven to 325 degrees.
- In a bowl, combine the dry seasonings: thyme, brown sugar, salt, black pepper, and garlic powder.
- Pat the steaks dry with paper towels. This helps achieve a nice sear. Rub all sides of the steaks with the seasoning mixture.
Cooking
- Heat a cast iron skillet over high heat. Once it’s very hot, carefully add 1-2 tablespoons of olive oil.
- Sear the steaks for 30 seconds on each side. You want them to develop a nice, flavorful crust.
- Place a 1/2 tablespoon slice of butter on top of each steak.
- Transfer the skillet to the preheated oven. Cook for about 10-12 minutes.
- Using a meat thermometer, check the internal temperature of the center of the steak. When it reaches 125 degrees, pull the steak out of the oven and let it rest for 5 minutes.
- Slice the steak and serve it with your favorite side dishes.
Notes
Let the steak come to room temperature before cooking for even cooking. Use a meat thermometer to avoid overcooking. Rest the steak before slicing to retain its juices, ensuring each bite is tender and juicy. Adjust the seasoning to your taste; add more garlic powder or herbs if you love that flavor. Store leftovers in an airtight container for 3-4 days or freeze for up to 3 months.
