  • 1 lb kielbasa cut into bite-sized pieces
  • 2 cups bell peppers cut into bite-sized pieces
  • 1 medium onion cut into bite-sized pieces
For the Glaze
  • 1/4 cup honey
  • 4 cloves garlic minced
  • 2 tablespoons olive oil
  • 1 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Cut the kielbasa, bell peppers, and onions into bite-sized pieces.
  3. In a bowl, mix honey, minced garlic, olive oil, salt, and pepper to create a flavorful glaze.
Cooking
  1. On a sheet pan, combine the kielbasa and veggies, then pour the glaze over the top, tossing to coat everything well.
  2. Spread the mixture out in a single layer for even cooking.
  3. Bake in the preheated oven for 20-25 minutes until the vegetables are tender and slightly caramelized.
Serving
  1. Serve it immediately and enjoy it on its own, or over rice or quinoa.

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, simply place it in the oven or microwave until warmed through. Consider adding red pepper flakes for added flavor.
