Ingredients
  

For the dip
  • 1 cup green olives, pitted Use good quality olives for the best flavor.
  • 1 cup black olives, pitted You can use any type of pitted olives you like!
  • 2 cloves garlic, minced Adjust the amount of garlic to your taste.
  • 1/4 cup olive oil Adjust for consistency if needed.
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Method
 

Preparation
  1. In a food processor, combine the green olives, black olives, garlic, olive oil, lemon juice, and oregano.
  2. Blend until smooth, adjusting the consistency with more olive oil if necessary.
  3. Season with salt and pepper to taste.
  4. Serve with fresh veggies or pita chips.

Notes

After making, store in an airtight container in the refrigerator for 3 to 5 days. If it thickens, mix in extra olive oil before serving. For variation, add feta cheese or sun-dried tomatoes.
