Preparation
  1. In a bowl, whip together the heavy cream, mascarpone cheese, powdered sugar, and vanilla extract until soft peaks form.
  2. In a rectangular baking dish, layer the graham crackers at the bottom.
  3. Spread a layer of the whipped cream mixture over the graham crackers, then sprinkle a layer of mixed berries on top.
  4. Repeat the layering process until all ingredients are used, ensuring the final layer is the whipped cream mixture.
  5. Cover the dish and refrigerate for at least 4 hours, or preferably overnight, to allow it to set.
  6. Just before serving, garnish with fresh mint leaves for an extra touch of freshness.

Notes
