  • 1 pound ground beef

  • 1 cup shredded cheese (cheddar or Swiss) Feel free to use your favorite cheese.
  • 1/2 cup onions, diced
  • 2 cloves garlic, minced
  • 1 cup cauliflower rice A low-carb option.
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat. Add onions and garlic, sauté until they become translucent.
  3. Add the ground beef and mushrooms to the skillet. Cook until the beef is browned, seasoning with salt and pepper.
  4. Stir in the cauliflower rice and half of the shredded cheese.
  5. Transfer the mixture to a casserole dish and top with the remaining cheese.
Cooking
  1. Bake for 20-25 minutes or until the cheese is melted and bubbly.

Notes

Serve warm with a simple green salad or roasted vegetables. Offer additional condiments like ketchup or mustard for a cheeseburger flair. Store leftovers in an airtight container for up to 3-4 days, or freeze individual portions for up to 3 months.
