  • 2 strips lime zest, sliced
  • 2 tbsp lime juice
  • 1 tsp sugar Adjust based on sweetness preference
  • Kosher salt and freshly ground black pepper To taste
Watermelon and Garnish
  • 1/2 small watermelon, rind discarded and sliced Choose a ripe watermelon for best sweetness
  • 1/3 cup torn fresh mint More leaves can be added for serving
  • Flaky sea salt For sprinkling on top

Method
 

Preparation
  1. In a bowl, whisk together the olive oil, lime juice, and sugar until well combined.
  2. Season the mixture with a pinch of kosher salt and freshly ground black pepper to taste.
  3. Arrange the sliced watermelon on a serving plate.
  4. Drizzle the oil and lime dressing over the watermelon.
  5. Top with the lime zest, torn mint, and a sprinkle of flaky sea salt.
  6. Serve immediately.

Notes

Mojito Watermelon is best served fresh. Store leftovers in an airtight container in the refrigerator and consume within a day or two. Add fresh mint before serving leftovers for extra flavor.
