Preparation
- Preheat your oven to 350°F (175°C) and prepare your muffin tin by greasing it or using silicone muffin liners.
- In a large bowl, combine rolled oats, peanut butter, honey or maple syrup, mashed bananas, protein powder, vanilla extract, baking powder, and salt. Stir until well combined.
- Fold in chocolate chips, nuts, or dried fruit if desired.
- Divide the mixture evenly into the muffin cups.
Baking
- Bake them in the oven for 15-20 minutes until the tops are lightly golden and a toothpick comes out clean.
Cooling and Serving
- Let them cool before removing from the tin. Enjoy these cups as a breakfast, snack, or post-workout treat!
Notes
Store in an airtight container in the fridge for up to a week. Can be frozen for longer storage.
