Preparation
- Dice the jalapeno and garlic and add them to a medium-sized bowl.
- Add lime juice, crushed red pepper, salt, and pepper to the bowl. Whisk in the olive oil until well combined.
- Finely slice the cucumbers and add them to the dressing.
- Finely mince the cilantro and mix everything together in the bowl.
- You can either serve it immediately or let it sit in the fridge to marinate for a couple of hours.
Notes
Serve chilled as a side dish or snack. Store leftovers in an airtight container in the refrigerator for up to two days.
