Salad Ingredients
  • 1 jalapeno (seeded and finely diced) For a milder flavor, remove the seeds and membranes.
  • 2 cloves garlic (finely minced)
  • 3 tablespoons lime juice (fresh) Fresh lime juice is recommended for best flavor.
  • 1/4 teaspoon red pepper (crushed)
  • ½ teaspoon salt (or to taste)
  • to taste Black pepper
  • 3 tablespoons olive oil
  • 2 cucumbers (very finely sliced) Use a mandolin or a sharp knife for slicing.
  • 4 tablespoons cilantro (minced, to taste) Adjust according to preference.

Method
 

Preparation
  1. Dice the jalapeno and garlic and add them to a medium-sized bowl.
  2. Add lime juice, crushed red pepper, salt, and pepper to the bowl. Whisk in the olive oil until well combined.
  3. Finely slice the cucumbers and add them to the dressing.
  4. Finely mince the cilantro and mix everything together in the bowl.
  5. You can either serve it immediately or let it sit in the fridge to marinate for a couple of hours.

Notes

Serve chilled as a side dish or snack. Store leftovers in an airtight container in the refrigerator for up to two days.
