Ingredients
  

For the slaw
  • 2 cups diced ripe mangos Use ripe mangos for the best sweetness.
  • 2 cups shredded green cabbage
  • 2 cups shredded red cabbage
  • 1 cup sliced red bell pepper
  • 1/2 cup chopped cilantro
For the dressing
  • 2 tablespoons lime juice Adjust to taste.
  • 1 tablespoon honey or agave syrup Use agave for a vegan option.

Method
 

Preparation
  1. In a large bowl, combine the diced mangos, shredded red and green cabbage, sliced red bell pepper, and chopped cilantro.
  2. In a small bowl, whisk together lime juice, honey (or agave syrup), salt, and pepper.
  3. Pour the dressing over the slaw mixture and toss to combine well.
  4. Serve immediately or refrigerate for 30 minutes to let the flavors meld.

Notes

Serve fresh as a side dish for grilled meats, tacos, or fish. Store leftovers in an airtight container for up to two days. The slaw is best enjoyed fresh to maintain crispiness. You can add other vegetables like carrots or cucumbers for extra crunch.
