  • 1 cup diced tomatoes (canned or fresh) Drained if using canned.
  • 1/2 cup chopped onions Use yellow or white onions.
  • 1 packet taco seasoning Choose mild or spicy depending on preference.
  • 1 cup cauliflower rice (or chopped cauliflower) For a lower-carb option.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with chopped onions until cooked through. Drain excess fat.
  3. Add taco seasoning and diced tomatoes to the beef. Stir to combine and cook for an additional 3-5 minutes.
  4. In a baking dish, layer the cauliflower rice at the bottom.
  5. Spread the beef mixture over the cauliflower.
  6. Top with shredded cheese.
Baking
  1. Bake in the preheated oven for 20-25 minutes or until the cheese is melted and bubbly.
Serving
  1. Serve hot, garnished with your favorite taco toppings.

Notes

For extra flavor, consider adding diced bell peppers or jalapeños to the beef mixture. Substitute ground turkey or chicken for an even healthier option. Leftovers can be stored in an airtight container for up to 3-4 days.
