  • 1 lb ground beef
  • 1 packet taco seasoning Check for gluten-free if needed.
  • 1 cup diced tomatoes Canned or fresh.
  • 1 cup black beans Drained and rinsed.
  • 1 cup shredded cheese Cheddar or Mexican blend.
  • 1/2 cup sour cream
  • 1/2 cup diced bell peppers
  • 1/2 cup diced onion
  • 2 cups cauliflower rice Can substitute with regular rice.
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the ground beef, draining any excess fat.
  3. Add taco seasoning, diced tomatoes, black beans, bell peppers, and onions to the skillet. Cook until heated through.
  4. In a baking dish, layer the meat mixture, cauliflower rice, and half of the cheese.
  5. Spread sour cream on top and sprinkle the remaining cheese.
Baking
  1. Bake in the preheated oven for 20-25 minutes, or until cheese is bubbly and golden.

Notes

Feel free to substitute ground beef with turkey or chicken for a leaner option. You can add more vegetables like zucchini or corn for extra nutrition and flavor. Adjust the spiciness by adding your favorite hot sauce or using spicy taco seasoning.
