Preparation
- Preheat the oven to 180°C.
- Heat olive oil in a pan. Sauté the onion until translucent, then add the spinach and cook until wilted.
- In a bowl, beat the eggs and add cream, mixing well. Season with salt, pepper, and nutmeg.
- Add the spinach and feta cheese to the egg mixture and stir to combine.
- Pour the mixture into a greased baking dish and bake for 35-40 minutes, or until the casserole is golden brown.
Serving
- Allow to cool slightly before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to three days. You can freeze individual portions for a quick meal later, thaw them in the fridge overnight before reheating.
