Ingredients
  

Vegetables
  • 500 g fresh spinach or 300 g frozen spinach
  • 1 medium onion optional, diced
Dairy
  • 200 g feta cheese crumbled
  • 100 ml cream or crème fraîche
Eggs
  • 4 large eggs
Spices and Oils
  • 2 tbsp olive oil
  • to taste salt
  • to taste pepper
  • to taste nutmeg optional, freshly grated

Method
 

Preparation
  1. Preheat the oven to 180°C.
  2. Heat olive oil in a pan. Sauté the onion until translucent, then add the spinach and cook until wilted.
  3. In a bowl, beat the eggs and add cream, mixing well. Season with salt, pepper, and nutmeg.
  4. Add the spinach and feta cheese to the egg mixture and stir to combine.
  5. Pour the mixture into a greased baking dish and bake for 35-40 minutes, or until the casserole is golden brown.
Serving
  1. Allow to cool slightly before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. You can freeze individual portions for a quick meal later, thaw them in the fridge overnight before reheating.
