Preparation
- Preheat the oven to 150 degrees Celsius (300 degrees Fahrenheit).
- In a mixing bowl, combine the eggs and cottage cheese, stirring well.
- Add the remaining ingredients: ground psyllium husk, salt, low-carb baking powder, ground flaxseed, and almond flour. Mix until fully combined.
- Let the dough sit for about 10 minutes to thicken.
- With wet hands, form equal-sized rolls and place them on a baking sheet lined with parchment paper.
- Optionally, sprinkle pumpkin seeds or sunflower seeds on top for added crunch.
Baking
- Bake in the oven for around 30 minutes or until the rolls turn golden brown.
- Once done, remove from the oven, let them cool slightly, and enjoy warm.
Notes
Store leftover rolls in an airtight container in the fridge for up to 3 days. For longer freshness, you can freeze them securely.
