Main ingredients
  • 2 large eggs Ensure they are at room temperature.
  • 1 cup cottage cheese Room temperature for best texture.
  • 1/4 cup almond flour Use certified gluten-free for gluten-free option.
  • 1 tablespoon low-carb baking powder Check that it is low in carbs.
  • 1 tablespoon ground psyllium husk Helps in binding.
  • 1 tablespoon ground flaxseed Additional fiber and nutrition.
  • 1/2 teaspoon salt Adjust to taste.
Optional toppings
  • 1 tablespoon pumpkin seeds For added crunch.
  • 1 tablespoon sunflower seeds For added crunch.

Method
 

Preparation
  1. Preheat the oven to 150 degrees Celsius (300 degrees Fahrenheit).
  2. In a mixing bowl, combine the eggs and cottage cheese, stirring well.
  3. Add the remaining ingredients: ground psyllium husk, salt, low-carb baking powder, ground flaxseed, and almond flour. Mix until fully combined.
  4. Let the dough sit for about 10 minutes to thicken.
  5. With wet hands, form equal-sized rolls and place them on a baking sheet lined with parchment paper.
  6. Optionally, sprinkle pumpkin seeds or sunflower seeds on top for added crunch.
Baking
  1. Bake in the oven for around 30 minutes or until the rolls turn golden brown.
  2. Once done, remove from the oven, let them cool slightly, and enjoy warm.

Notes

Store leftover rolls in an airtight container in the fridge for up to 3 days. For longer freshness, you can freeze them securely.
