- Peel the bananas and slice them into thick coins, about 1/2 inch each (you should get 16-20 coins).
- Arrange banana slices on a parchment-lined baking sheet, making sure they do not touch.
- Freeze banana slices for 15-20 minutes, until firm but not rock hard.
- Remove from freezer and spread about 1/2 teaspoon peanut butter on each banana coin.
- Sprinkle each with chopped peanuts and a pinch of sea salt (if using). Add optional toppings if desired.
- In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 15-second bursts, stirring each time, until melted and smooth (about 45 seconds total).
- Drizzle melted chocolate over each banana bite, or dip the tops for a thicker coating.
- Return the tray to the freezer for 30-60 minutes, until chocolate is set and bananas are frozen solid.
- Let sit at room temperature for 5 minutes before serving for the best texture. Enjoy immediately and store leftovers in a freezer-safe container.
