Preparation
- Preheat the oven to 475°F (245°C).
- Roll out the pizza dough on a floured surface to your desired thickness.
- Transfer the dough to a pizza stone or baking sheet.
- Spread the ricotta cheese evenly over the crust.
- Arrange the thin lemon slices on top of the ricotta.
- Sprinkle the mozzarella cheese over the lemons.
- Drizzle with olive oil and season with salt and pepper.
- Bake in the preheated oven for 10-12 minutes, or until the crust is golden and the cheese is bubbly.
Serving
- Remove from the oven, add fresh herbs, and slice to serve.
- Serve hot straight from the oven. Pair with a light salad or chilled white wine.
Notes
If you have leftovers, let the pizza cool down to room temperature, then store it in an airtight container in the refrigerator for 2-3 days. Reheat in the oven or microwave.
