Method
 

Preparation
  1. Preheat the oven to 475°F (245°C).
  2. Roll out the pizza dough on a floured surface to your desired thickness.
  3. Transfer the dough to a pizza stone or baking sheet.
  4. Spread the ricotta cheese evenly over the crust.
  5. Arrange the thin lemon slices on top of the ricotta.
  6. Sprinkle the mozzarella cheese over the lemons.
  7. Drizzle with olive oil and season with salt and pepper.
  8. Bake in the preheated oven for 10-12 minutes, or until the crust is golden and the cheese is bubbly.
Serving
  1. Remove from the oven, add fresh herbs, and slice to serve.
  2. Serve hot straight from the oven. Pair with a light salad or chilled white wine.

Notes

If you have leftovers, let the pizza cool down to room temperature, then store it in an airtight container in the refrigerator for 2-3 days. Reheat in the oven or microwave.
