- In a mixing bowl, combine the rolled oats, peanut butter, honey or maple syrup, lemon juice, and lemon zest.
- Mix everything together until it's well combined and sticky.
- If desired, stir in shredded coconut and chocolate chips.
- Scoop small amounts of the mixture and form them into cookie shapes using your hands.
- Place the cookies on a baking sheet lined with parchment paper.
- Refrigerate the cookies for about 30 minutes to let them set.
Notes
Store in an airtight container in the refrigerator for up to one week. They can also be frozen; just separate layers with parchment paper.
