  • 1 cup rolled oats Use regular rolled oats for best texture.
  • 1/2 cup peanut butter Natural peanut butter is recommended.
  • 1/2 cup honey or maple syrup Maple syrup can be used for a vegan option.
  • 1/4 cup lemon juice Adjust to taste.
  • 1 tbsp lemon zest Fresh lemon zest is best.
Optional Mix-ins
  • 1/4 cup shredded coconut Optional for added texture.
  • 1/4 cup chocolate chips Optional for a sweet contrast.

Method
 

Preparation
  1. In a mixing bowl, combine the rolled oats, peanut butter, honey or maple syrup, lemon juice, and lemon zest.
  2. Mix everything together until it's well combined and sticky.
  3. If desired, stir in shredded coconut and chocolate chips.
  4. Scoop small amounts of the mixture and form them into cookie shapes using your hands.
  5. Place the cookies on a baking sheet lined with parchment paper.
  6. Refrigerate the cookies for about 30 minutes to let them set.

Notes

Store in an airtight container in the refrigerator for up to one week. They can also be frozen; just separate layers with parchment paper.
