Preparation
- Preheat your oven to 425°F (220°C).
- In a mixing bowl, combine the minced garlic, lemon juice, lemon zest, olive oil, salt, and pepper.
- Add the chicken thighs to the bowl and coat them well with the marinade.
- Let the chicken marinate for at least 30 minutes to soak up all the flavors.
Cooking
- Arrange the marinated chicken thighs in a baking dish and pour the remaining marinade over them.
- Bake in the oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
- Finally, garnish with fresh parsley before serving.
Notes
For best flavor, marinate the chicken longer than 30 minutes. Adding thyme or rosemary can enhance the taste. For a crispy skin, broil the chicken for the last 5 minutes of cooking. Leftovers can be stored in an airtight container for up to 3 days.
