  • 4 cloves garlic, minced
  • 2 pieces lemons, juiced
  • 1 piece lemon, zested
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a mixing bowl, combine the minced garlic, lemon juice, lemon zest, olive oil, salt, and pepper.
  3. Add the chicken thighs to the bowl and coat them well with the marinade.
  4. Let the chicken marinate for at least 30 minutes to soak up all the flavors.
Cooking
  1. Arrange the marinated chicken thighs in a baking dish and pour the remaining marinade over them.
  2. Bake in the oven for 25-30 minutes or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
  3. Finally, garnish with fresh parsley before serving.

Notes

For best flavor, marinate the chicken longer than 30 minutes. Adding thyme or rosemary can enhance the taste. For a crispy skin, broil the chicken for the last 5 minutes of cooking. Leftovers can be stored in an airtight container for up to 3 days.
