- Divide the sausage mixture into six portions. Flatten each portion and wrap it around a hard-boiled egg, ensuring each egg is fully encased.
Cooking
- Roll each wrapped egg in almond flour, then dip it in the beaten egg, and roll again in almond flour.
- Heat oil in a frying pan over medium heat and fry the eggs until golden brown.
- Transfer the eggs to a baking sheet and bake in the preheated oven for 15-20 minutes until cooked through.
- Let the eggs cool slightly before serving.
Notes
Store leftover Keto Scotch Eggs in an airtight container in the refrigerator for up to three days. To reheat, place them in the oven for a few minutes to regain their crispiness. Ensure the sausage is at room temperature for easier handling. Experiment with different spices for variety.
