Preparation
- Preheat the oven to 400°F (200°C).
- In a small bowl, mix together mayonnaise, ketchup, minced onion, sweetener, relish, and vinegar.
- Spray a 9 x 13 dish lightly with cooking spray. Layer the chopped corned beef at the bottom of the dish.
- Evenly add the drained sauerkraut over the beef.
- Spread the prepared sauce over the sauerkraut layer.
- Sprinkle the shredded Swiss cheese generously on top.
- Bake the casserole in the preheated oven for 20 minutes, or until the cheese is bubbly and golden. Serve immediately.
Notes
Best enjoyed fresh out of the oven, serve hot with a side salad or vegetable sticks. For extra crunch, consider adding crushed pork rinds on top before baking. This dish can be customized with jalapeños or bell peppers for extra flavor.
