  • 1 cup Monterey Jack cheese, shredded Can substitute with provolone or cheddar.
  • 1 medium bell pepper, sliced Any color bell pepper can be used.
  • 1 medium onion, sliced Yellow or white onions work well.
  • 1 tsp garlic powder Fresh garlic can be used for more flavor.
  • to taste Salt and pepper Adjust to your preference.
  • as needed Lettuce leaves or keto-friendly wraps for rolling For a low-carb option, use lettuce.

Preparation
  1. In a skillet, cook the ground meat over medium heat until browned. Drain any excess fat.
  2. Add sliced bell pepper and onion to the skillet, cooking until softened.
  3. Stir in garlic powder, salt, and pepper.
  4. Remove from heat and mix in the shredded cheese until melted.
  5. Lay out lettuce leaves or wraps, place a portion of the meat mixture on each, and roll them up.

Notes

Best served warm. Pair with a side salad or roasted vegetables. Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or skillet.
