Ingredients
  

Main Ingredients
  • 24 slices pepperoni Use any brand of pepperoni.
  • 1 cup shredded mozzarella cheese Shredded for better melting.
  • 1/4 cup grated parmesan cheese Can substitute with other cheeses.
  • 1/2 teaspoon Italian seasoning Optional for added flavor.
  • 2 tablespoons low sugar pizza sauce Optional for added moisture.
  • as needed Cooking spray or olive oil For greasing the muffin pan.

Method
 

Preparation and Baking
  1. Preheat your oven to 400°F (200°C).
  2. Lightly grease a mini muffin pan with cooking spray or olive oil.
  3. Place one slice of pepperoni into each muffin cup to form a base.
  4. In a bowl, mix together the mozzarella, parmesan, and Italian seasoning.
  5. Add a small spoonful of the cheese mixture on top of the pepperoni in each cup.
  6. If using pizza sauce, add a small dot under or over the cheese.
  7. Bake for 10 to 12 minutes, or until the cheese is golden brown and bubbly.
  8. Let cool for 5 minutes before carefully removing from the pan.

Notes

These pizza bites are best served warm. Enjoy them with a side of low-sugar pizza sauce for dipping. Store leftovers in an airtight container in the refrigerator for up to three days.
