Preparation and Baking
- Preheat your oven to 400°F (200°C).
- Lightly grease a mini muffin pan with cooking spray or olive oil.
- Place one slice of pepperoni into each muffin cup to form a base.
- In a bowl, mix together the mozzarella, parmesan, and Italian seasoning.
- Add a small spoonful of the cheese mixture on top of the pepperoni in each cup.
- If using pizza sauce, add a small dot under or over the cheese.
- Bake for 10 to 12 minutes, or until the cheese is golden brown and bubbly.
- Let cool for 5 minutes before carefully removing from the pan.
Notes
These pizza bites are best served warm. Enjoy them with a side of low-sugar pizza sauce for dipping. Store leftovers in an airtight container in the refrigerator for up to three days.
