Ingredients
  

Main Ingredients
  • 1 large head large head of cauliflower, cut into florets or 2 small heads
  • 4 tablespoons butter for creaminess
  • ½ cup sour cream adds creaminess
  • 1 cup shredded cheddar cheese for flavor
  • 4 slices cooked and crumbled bacon adds crunch and flavor
  • 2–3 cloves garlic or ½ tsp garlic powder, adjust to taste
  • Salt and pepper to taste
  • 2 tablespoons chopped green onions or chives for garnish
  • 2 tablespoons cream cheese optional, for extra creaminess
  • 1 splash heavy cream optional, for adjusting texture
  • paprika for topping optional

Method
 

Preparation
  1. Cut the cauliflower into small florets and steam or boil it until soft, about 10–12 minutes. Be sure to drain it very well.
  2. While the cauliflower is cooking, fry the bacon until crispy. Afterward, let it cool, then chop or crumble it.
Blending
  1. In a food processor, blend the cooked cauliflower with butter, garlic, sour cream, salt, and pepper until smooth.
  2. Mix in the shredded cheddar cheese, crumbled bacon, and chopped green onions. Stir everything together.
Final Touches
  1. Taste the mixture and adjust the seasoning as needed. If it's too thick, you can add a bit of cream or cream cheese for better texture.
  2. Top with extra bacon, cheese, or a sprinkle of paprika before serving hot.

Notes

Serve immediately while warm and creamy. Pairs wonderfully with grilled meats, roasted vegetables, or as a side to any meal. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
