Ingredients
  

Pasta and Vegetables
  • 2 cups cooked pasta
  • 1 cup corn (fresh or canned)
  • 1 diced bell pepper
  • 1/2 chopped red onion
  • 1 cup halved cherry tomatoes
  • 1/2 cup chopped cilantro
Dressing
  • 1/4 cup lime juice
  • 2 tablespoons olive oil
  • 1 teaspoon chili powder
  • salt and pepper to taste

Method
 

Preparation
  1. In a large bowl, combine cooked pasta, corn, diced bell pepper, chopped red onion, halved cherry tomatoes, and chopped cilantro.
Dressing
  1. In a small bowl, whisk together lime juice, olive oil, chili powder, and salt and pepper.
  2. Pour the dressing over the pasta salad and toss until everything is well mixed.
Chill and Serve
  1. Chill in the fridge for at least 30 minutes before serving to enhance flavors.
  2. Serve cold, garnished with extra cilantro or lime wedges.

Notes
