Ingredients
  

For the Cake
  • 1 cup softened butter make sure it's softened but not melted
  • 1 cup granulated sugar
  • 2 large eggs incorporate one at a time
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup guava juice use fresh guava juice for better flavor
  • 1/2 cup sour cream can substitute with plain yogurt or buttermilk
  • 1/2 cup guava jam optional, swirl in for extra flavor
For Serving
  • icing glaze to drizzle on top
  • guava syrup to drizzle on top
  • fresh fruit optional, for serving
  • whipped cream optional, for serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare an 8-inch round cake pan.
  2. In a mixing bowl, cream together the softened butter and sugar until light and fluffy.
  3. Incorporate the eggs one at a time, ensuring each is mixed well before adding the next. Follow with the vanilla extract.
  4. In a separate bowl, combine the all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add half of the dry mixture to the butter mixture, followed by the guava juice and sour cream. Mix in the remaining dry ingredients until well combined.
  6. If desired, swirl in the guava jam for added flavor.
Baking
  1. Pour the batter into the prepared pan and bake for 35-40 minutes or until a toothpick inserted in the center comes out clean.
Finishing Touches
  1. Once cooled, drizzle with icing glaze and top with guava syrup.

Notes

Store leftovers wrapped in plastic wrap or in an airtight container. Room temperature for up to 3 days or refrigerated for up to a week. Can freeze for up to 3 months.
