Ingredients
  

For the Marinade
  • 1 cup lime juice Freshly squeezed
  • 1/2 cup honey
  • 3 cloves minced garlic
  • 1/4 cup olive oil
  • 1/4 cup chopped cilantro
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
For Grilling
  • 1.5 pounds boneless skinless chicken thighs
For the Sauce
  • 1/4 cup additional lime juice
  • 1/4 cup honey
  • 2 tablespoons finely chopped cilantro

Method
 

Preparation
  1. In a bowl, mix together lime juice, honey, minced garlic, olive oil, chopped cilantro, smoked paprika, cumin, salt, and black pepper.
  2. Add the boneless skinless chicken thighs to the marinade and let them sit for at least 30 minutes.
Cooking
  1. Preheat your grill to medium-high heat.
  2. Place the marinated chicken thighs on the grill and cook for about 6-7 minutes on each side or until fully cooked.
  3. In a small bowl, combine additional lime juice, honey, and finely chopped cilantro to create the sauce.
  4. Drizzle the honey-lime sauce over the grilled chicken thighs before serving.

Notes

For extra flavor, marinate the chicken overnight. For alternative cooking methods, use a skillet or bake at 375°F for 25-30 minutes. Adjust honey and lime to preference.
