- In a bowl, whisk together honey, lime juice, lime zest, garlic, soy sauce, olive oil, salt, and pepper until well combined.
- Add the chicken breasts to the marinade, ensuring they are fully coated. Let them marinate for 10–15 minutes.
Cooking
- Heat a skillet over medium heat. Cook the chicken for 5–7 minutes on each side, or until golden and fully cooked through.
- Once cooked, remove the chicken and allow it to rest for a few minutes before slicing it into thin strips.
Assembly
- In serving bowls, layer warm rice as the base.
- Arrange the sliced chicken over the rice.
- Add the sliced avocado, halved cherry tomatoes, corn, and red onion on top.
- Finish by sprinkling with fresh cilantro, and if desired, add Greek yogurt or sour cream and chili flakes for an extra kick.
- Serve immediately while everything is warm and fresh.
