Ingredients
  

For the Chicken Marinade
  • 2 large chicken breasts (about 400g) Boneless and skinless
  • 2 tablespoons honey
  • 3 tablespoons fresh lime juice
  • 1 teaspoon lime zest
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Rice Bowl
  • 3 cups cooked white or brown rice Use warm, cooked rice as a base
  • 2 ripe avocados, sliced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn kernels
  • 1/4 cup red onion, sliced
  • 3 tablespoons fresh cilantro, chopped
  • 1/2 cup Greek yogurt or sour cream (optional) Use for added creaminess
  • 1/2 teaspoon chili flakes (optional) For spice

Method
 

Preparation
  1. In a bowl, whisk together honey, lime juice, lime zest, garlic, soy sauce, olive oil, salt, and pepper until well combined.
  2. Add the chicken breasts to the marinade, ensuring they are fully coated. Let them marinate for 10–15 minutes.
Cooking
  1. Heat a skillet over medium heat. Cook the chicken for 5–7 minutes on each side, or until golden and fully cooked through.
  2. Once cooked, remove the chicken and allow it to rest for a few minutes before slicing it into thin strips.
Assembly
  1. In serving bowls, layer warm rice as the base.
  2. Arrange the sliced chicken over the rice.
  3. Add the sliced avocado, halved cherry tomatoes, corn, and red onion on top.
  4. Finish by sprinkling with fresh cilantro, and if desired, add Greek yogurt or sour cream and chili flakes for an extra kick.
  5. Serve immediately while everything is warm and fresh.

Notes

Store leftovers in airtight containers; keep chicken and rice separate from fresh toppings. Best consumed within 3 days. For added flavor, marinate the chicken for up to 2 hours.
